The northern part of India is known for its delicious culinary delights as every part of the region has its own unique and authentic cuisines. The state Uttar Pradesh was once one of the largest states in India and was divided into many smaller princely states before independence. The cuisines of Uttar Pradesh were greatly influenced by the Mughlai style of cooking. This style of cooking is primarily a blend of recipes from Central Asia and North India and with the passage of time it became the traditional cuisine of North India. Many princely states in Uttar Pradesh were ruled by the Nawabs who were also great foodies. Awadhi cuisine is a gift that came out of the kitchen of the Nawabs. Awadhi cuisine is influenced by the cooking style of Central Asia, the Middle East, and Northern India. Comprising both vegetarian and non-vegetarian dishes, the Awadhi cuisine mainly consists of mutton, paneer, and rich spices. The most famous dishes are kebabs, dum biryani, and various mutton recipes.
